My 65 with the V6 had the pedal too high and I used to keep my heel on the tunnel but very uncomfortable. I ended up adjusting the threaded rod linkage to the carburetor which lowered the pedal to a comfortable position with my heel on the floor. I may not be getting full throttle but there is enough torque and power for my needs, so I will trade comfort for power I do not need. If I ever need full throttle it is an easy and quick fix. Also I have at least 2 inches between gas and brake.

I had the same problem with having to hold my foot up at an uncomfortable angle to depress the gas pedal. That is no fun, especially if you're driving any distance.

This fix I used wouldn't increase the spacing between the brake and gas pedals, but it helped a lot as far as making the lower end of the gas pedal closer to the floor. Maybe something like this, plus bending the rod the gas pedal attaches to slightly to the right would do the trick?:
