Well I took Pete in to have the alignment measured today. Castor settings were +2.6* L and +2.2* R. This is with a 4* wedge sitting on 3" Black Diamond springs. So without the wedge I was at -1.4* L and -1.8* R. Looks like I'll need a 7.5* wedge to get around +6*. Way more than I expected.

    6° is a good target.
On my '71 D30 swap, with 2.5" Skyjacker Softride springs, I was 0.9° and 1.1°.
My Skyjacker springs had already been broken in; I ran them for a couple years with the D27.
    I installed 5° shims.
    It tracked perfectly after that.

Your 3" springs probably have more arch than my 2.5" Skyjackers that were broken in when I mated them to the D30.
And if your 3" springs are new, the arch is probably excessive, designed to settle a bit and eventually sit at ~3".
7.5° does seem like a lot. You might get away with less if you think your springs will settle

Springs are several years old, good and springy. No noticeable sag though. It does seem excessive but its only 3.5 from where I'm at now. As unstable as it is now that's probably right.

In that case I'd go for the 7.5°.
Probably have to order these custom (call McRuff) or make them yourself, 7.5° is not likely to be found on-the-shelf from the usual suppliers.
Let us know how it works after you get them in.
    Good luck!

If you want to do a lot more work and skip the shims you can cut the outer "C's" loose and rotate them. I did that with mine, mostly so I could get a better driveshaft angle. I set mine at 6*
